Why Gluten-Free?

Gluten is a protein composite found in wheat, rye, barley and triticale – a cross between wheat and rye. Gluten helps foods maintain their shape, acting as a glue that holds food together. Quite a few people have an autoimmune reaction when eating gluten (Celiac Disease) and lots of others have a severe sensitivity when exposed.
